Introduction
We should always bear in mind that eggs are like fruits, vegetables and sea foods. They are perishable products and have EXPIRATION dates.
Everybody knows that egg has been used as food by men since early times. But egg is no different from other perishable products being sold in the market. Eggs will not last longer than what we have been believing.
The Farm Freshness of an egg will last only from ten (10) to fourteen (14) days from the date it was laid, depending on the climatic condition (temperature), care, storage and handling that may delay earlier deterioration of the quality of the egg yolk.
It is too difficult to detect the quality of the egg yolk inside the egg shell. No human naked eye or even five senses of man can identify the actual quality or condition of an egg yolk that is covered by a hard shell unless the covering shell is broken.
Egg, when spoiled, is the potential source of Salmonella that causes health problems.
